36969638_10156729159993109_6486268470936731648_nThese veggie patties are an easy way to get extra vegetables into your diet.  They can be served with your favourite toppings like sweet chilli or tzatziki, or  I just eat them plain.  They store well in the fridge to always have on hand.

Makes 4 serves, 143 cal per serve
18g Carbs – 4g Fat – 9g Protein
Ingredients: Instructions:
3 Medium Carrots Preheat the oven to a moderate heat.
3 Medium Zucchinis – grate the zucchini and squeeze any extra liquid out of it
½ brown onion -grate the carrots and onion and add to the zucchini
3 eggs -Add the eggs, flour, garlic and any salt and pepper to the mix and stir well.
2/3 cup flour -Spray a frypan with the cooking spray and put on the heat
teaspoon crushed garlic -Measure the mix into half cup measurers and put it on the hot frypan
light cooking spray -Flatten slightly and cook for 4 minutes each side or until adequately browned
-Once all patties are browned, place them on a baking tray and bake until cooked through, approx 10 minutes

      Absolutely. I’ve used almond flour before too
